1) How do I stop asterisks from showing at log-in screen and other GUI password entry screens?
2) For some reason, when I create documents, these log-type files show up for each corresponding .odt document. It didn't happen the first day I created the first two documents, but this morning after creating a third document they appeared.
I've linked two screenshots. One of the document icons with paths, and another of one of the documents contents.

1) you want to make it without asterixes? Or you want to see what you are typing?
2) Your HDD has many 'helper' files, ie files with dot as a first character in filename. While in thunar, press Ctrl-H (toggles view of those 'dot-files'), and you will not see them. When you exit LibreOffice/OpenOffice, those files normally get deleted anyway.
Postpone all your duties; if you die, you won't have to do them ..

Perfect, thank you. Yes, in regards to the password entry, I wanted to make it so that as I enter my password nothing shows. Similar to the way password entry is dealt with in the terminal.

^I don't know (don't use SLIM for a while now), but looking at the documentation, it is not possible, unless you want to hide both username and password. See:
$ more /usr/share/slim/themes/waldorf/slim.themeand SLIM web page.

In Slim themes you can set input field position. One possible trick could be setting password_x or password_y outside dimensions of the monitor.
Edit: tried it, didn't work. password_x or password_y set position for the prompt text., not the input field. If you don't mind writing your username blind too, you can set same background and text colours for the input fields.
