I've been thinking about this for awhile and honestly can't remember seeing anything like it, so...here goes!

We have a what are you listening to right now thread. We have a what books are you reading thread.

We have a how old are you and where are you from thread, and we have an old school movies thread.

There's one about our recipes and even one about our coffee. Ones about drinking, smoking and joking. But not one that I know about what we're eating right now.

Me? I'm eating chocolate-covered apricots. What are you eating right now?

Hongshao Rouxiang - Red-braised Pork Cubes

Hong shao rou (also "Red Braised Pork", "Chairman Mao's Red Braised Pork", or "Chairman Mao's Hong Shao Rou") is a classic pork dish from mainland China, cooked using pork belly and a combination of ginger, garlic, aromatic spices, chilli peppers, sugar, light and dark soy, and rice wine. The pork belly is cooked until the fat and skin are gelatinous and melt easily in the mouth, while the sauce is usually thick, sweet and fairly sticky.
As the English name suggests, the melt in the mouth texture is formed as a result of a long braising process, using relatively little liquid.
Very popular in China, this dish is becoming more popular in western countries with the spread of Chinese immigrants across the globe.
