Okay, I'm going to come right out and say it before any of you do; Android is NOT Linux, despite having the same kernal, DNA, whathaveyou. But I'm betting that those of us who are using tablets and smart-phones naturally gravitated to Android, awaiting the day when they could root the damn thing and install Debian on it. In the meantime, I suspect you've found something useful to run on the things, other than Google Docs.
What's good, what should the rest of us know about?

Oh, and you technically can install Debian on some Android devices, though it's not the most pleasant of experiences. Maybe Ubuntu's Unity would work better, I dunno.
Okay, now that we've got the most important issues out of the way, you want apps, right?
Basically, ever since ICS (now running Jelly Bean), I've tried to limit myself to Holo themed apps as much as possible. Got sick of all the aesthetic inconsistency and skeuomorphism in pre-ICS apps and iOS.
Here's one of my faves, which many *nixers will probably find useful. : Script Kitty 2.0
This one does a better job than the Play Store in terms of app searching: Playboard
This one costs US$3, but it's a better (and faster) browser than the current state Chrome is in, imho: xScope Browser Pro
If you dislike ads: Ad Away (requires root)
Sort of an Android equivalent of GnomeDo or Quicksilver: Conjure
Accounting and money management: Xero
Sync with Google Tasks: Free/Paid
Great for wallpapers: Pattrn
Know when to keep away from your partner: Cycles

Which Android apps are best may often be determined by the resources available on the Android device.
For instance, Diceplayer is the best video player of a dozen I tested. It handles the most video formats of any of the media players and renders video better than any of the rest. However, it does not handle audio-only files, just video. It is also hardware resource intensive. While it works great on a Google Nexus 7 tablet, Diceplayer would probably be ill-suited for a smartphone. BTW, my second choice is BS-player which also plays MP3, WMA, FLAC, OGG, and M4A audio files.
